Irish cheddar is made without a cheddaring process like English cheddar. Difference of cultures and enzymes makes it a bit rough in texture . However it tastes great and melts perfectly. It has a dense flavour with savoury notes , feels like almonds and mushrooms with after notes of fresh grass .
